San Pellegrino Sparkling Mineral Water 1 L — Case of 12, Glass

San Pellegrino needs little introduction, but its character is worth spelling out. The water rises from thermal springs at San Pellegrino Terme in the Lombardy Alps, north of Bergamo, and leaves the ground carrying 970 mg/L of dissolved minerals. Calcium at 180 mg/L and sulfate at 460 mg/L give it real weight.

On the palate it is full and slightly savory, with a fine bead and a firm, faintly bitter finish from the sulfates. That structure is why it holds up to rich food: prosciutto, aged cheeses, braised meats, tomato sauces, fried seafood. The liter glass bottle is the size for a shared table, set down at the start of a long Sunday lunch or poured through a dinner party. It suits trattoria and wine bar service for the same reason.
