Mondariz still is a quiet water with a long story. Its springs sit in the granite country of Galicia, and in the late nineteenth century they were the heart of a grand spa resort.

Rain seeps through the granite and surfaces softly mineralized, at around 200 mg/L, with calcium at 12 mg/L and a pH of 7.3. Without bubbles, that lightness shows as a smooth, unhurried texture with nothing lingering after the sip. It is the water to keep pouring through a long lunch of tortilla, jamón, grilled hake and green salad.
