In the rainy northwest of Spain, Galicia's granite does the slow work of filtering the water that becomes Mondariz. The springs anchored a grand thermal resort in the late nineteenth century, and the name still belongs to one of the country's historic waters.

It emerges lightly mineral, about 200 mg/L, mostly gentle bicarbonate at 150 mg/L. Carbonated, it has a soft, polite sparkle over a light body and a clean finish.
