Fiuggi comes from the hills of Lazio, southeast of Rome, where the spring above the town of the same name has been prized since the Renaissance for one thing: its lightness. It is still bottled at the spring in Fiuggi.

The water carries just 120 mg/L of dissolved solids, with modest calcium, a little potassium and silica, and a near-neutral pH of 7.6. That light mineral load is what you taste, or rather what you do not: the water feels soft and almost weightless, with no aftertaste. It is the kind of still water you can drink freely through a long meal, beside fresh pasta, grilled vegetables or a delicate fish.
